Gluten-Free Yummies!

My youngest daughter has had stomach aches for about 3 months. We analyzed her diet and kept a food diary for about 6 weeks – nothing new in her diet. We tried to isolate what she ate the day prior to her stomach aches, thinking there had to be a connection to food. Nada – no consistency in the foods that we saw at the time. Until then she always seemed to be able to eat breads without an issue, so we didn’t think anything of it. Increasingly, her stomach aches became more frequent, more painful and lasted longer. We knew she was developing a chronic condition, but didn’t know what was behind it. We thought it may be hormones, but with the increasing nature of it we ruled that out. It dawned on me one day that it may be the breads. She never seemed to be intolerant to them before, but maybe she is now. After coming home from school early, again, I decided to give it a try. I contacted her school and informed them of our gluten-free test then we went to the grocery store and shopped to build our new gluten-free pantry! I devoured Pinterest gluten-free boards that evening, finding many recipes to try. Family members, who are also gluten-free, also contributed a wealth of information to get us started. So far, so good! It is the first time she has gone 5 days without a stomach ache in weeks! Here are some of our favorites so far!
